Soft cookies with Trinitario 70% bitter chocolate and fleur de sel. Even if that description sounds fairly conventional, you will find the flavour absolutely unique. Trinitario is a hybrid variety of cocoa that blends the characteristics of the Criollo bean with the delicate cocoa beans of the Forastero variety. According to legend, the Criollo trees on the island of Trinidad mysteriously disappeared and the Brazilian monks, in order to overcome the unbearable lack of cocoa, introduced beans of the Forastero variety, crossing them with whatever had remained of the Criollo. This rare result can be tasted in in the Chocolate Cookies of the Hotel Grande Bretagne.
